A Brief History of Syrian Cuisine: Fatayer

In this edition of A Brief History of Syrian Cuisine, we’ll be embarking on a written journey through the backstory of Fatayer, a cherished part of our culinary heritage.

Enjoy reading about its origins, the unique flavour profiles that make it special and why it continues to be a beloved staple on Tayybeh’s restaurant and catering menus.

What is Fatayer and What Is It Made Of?

A cross-generational savoury pastry favourite in Syria, a Fatayer is made from thin, flaky dough comprised of flour, water and yeast. Adding flavour enhancement, nutritional value and complementary textures, this light, airy baked good comes filled with a featured ingredient such as beef, produce or cheese.

How to Pronounce Fatayer

Fah-Tie-Yur

Where Did Fatayer Originate?

The Fatayer is a deeply rooted traditional pastry across the Levantine region which covers countries including Jordan, Lebanon, Palestine and Syria, resulting in it being a highly requested addition to catering menus curated by our Tayybeh team for family gatherings, weddings and other Middle Eastern occasions.

If there are recipes passed down a Syrian family tree, we can almost guarantee you’re receiving an ancestor’s take or evolution of their favourite Fatayer.

Why We Love Fatayer

At Tayybeh, our Syrian refugee staff have a deep affection for making and serving Fatayer because. This affection stems from memories of family occasions and comforting flavours prior to leaving Syria.

Not only are Fatayer recipes and techniques deeply woven into Syrian household traditions but so is the communal experience of making the patries. From dough kneading to making the fillings to the baking and first bites, it's a cherished activity and core memory, complete with delicious rewards plus a remembrance of those who first made Fatayer for each of us.
